Pumpkin Pie Smoothie






I've been drinking this smoothie for breakfast all week.  It's like having pumpkin pie and ice cream for breakfast but without the guilt.  No sugar, lots of protein and it's delicious.

Cashew Creme of Broccoli Soup



It's October and, hopefully, the el niƱo rains that we've heard so much about are on their way.  I've started to think about soup again. A big steaming bowl of hearty soup is one of my favorite fall dinners. What makes this broccoli soup different is that the cream is made from cashews.

Apple Harvest 2015


We picked the last of our Gala apples from the tree today, I think that qualifies as an official sign of fall!  The apples are smaller than usual, which I assume is result of the drought. We did have one day of rain this week, which we never, ever get in September, the garden loved it.  We're hoping this is a prelude to the very wet winter that has been predicted, and cross our fingers for a bigger crop next year.

Mini Blueberry Lemon Scones


My niece and I threw a baby shower brunch for my daughter a few weeks ago and I was so busy trying to get everything done on time that I forgot to take pictures. I think my daughter took this one,  I snatched it from Facebook.  There were yogurt parfaits, mini blueberry lemon scones, three types of finger sandwiches, veggies in hummus and chocolate coconut cupcakes to finish.  We matched the food to children's books.

Cauliflower Ceviche


Traditionally, ceviche is made from raw seafood that is marinated in citrus juice with onions, chili peppers and salt. In this recipe, I've replaced the seafood with cauliflower and added corn, cucumbers, tomatoes, mango and cilantro.

Roasted Potato Bunnies



Easter is just around the corner, and I've come up with an easy way to make your holiday meal a little more festive. My roasted potato bunnies will put a smile on the faces of your family and friends.  They work equally as well for brunch or dinner and they're very easy to make.  The hardest part will be to find a small bunny cookie cutter, at this late date, if you don't already have one.

Spring Equinox 2015


Yesterday was the Spring (Vernal) Equinox, the first day of Spring.  This is the moment that the sun shines directly on the equator and the length of day and night are nearly equal, because the earth's axis is neither tilted toward or away from the sun.  This occurred, in San Francisco, at exactly 3:45 pm.

Strawberry Cheesecake Brownie Hearts




Happy Valentine's Day!  I made some strawberry cheesecake brownie hearts for my sweetie.  These are all of his favorite desserts/flavors rolled into one treat.  Chocolate is always a must, cheesecake is favorite, and strawberry jam is a daily obsession.

Quinoa Squash Risotto Cake


This is a savory sort of cake made from a quinoa "risotto". The original recipe belongs to Edmundo, the chef and Deli Manager where I work.  It's so unique and delicious that I begged him for the recipe so I could make it at home.  Plus, I wanted to substitute the dairy products for their non-dairy counterparts.
