Raw Zucchini Salad


I harvested my first zucchini yesterday.  It was so fresh, I didn't have the heart to cook it.  You preserve the enzymes that help you digest vegetables when you eat them raw.  I decided to make a zucchini salad.





You’ll need a spiral slicer to make this salad.  It’s also called a Saladacco.  I bought mine online for $19.99.  You can also use the spiral slicer to cut zucchini to look like spaghetti. Top that with some pasta sauce for a wonderful, 

gluten free main course...but back to the salad.







There really isn’t a recipe for this salad, you just need the following:

Organic Zucchini 
Extra virgin olive oil 
Balsamic vinegar (the best you can afford)
Parmesan Cheese (optional)
Pine Nuts
Salt


(Balsamic vinegar, like wine, is aged in wooden casks and the longer it’s aged the better it is.  You really should buy the best quality balsamic vinegar that you can afford.) 

Slice the zucchini in the spiral slicer and mound it on the plates you intend to serve the salads on. Sprinkle each one with salt.  Next, drizzle the zucchini with the olive oil and the balsamic vinegar.  Grate some parmesan cheese over each one and sprinkle with pine nuts.  That’s it.  This is so good, it’s making my mouth water just writing about it.  I can’t wait for the next squash to ripen.
